Fish Molee
Ingredients
- 750g (1.5 lb) cod fillet skinned (*1)
- 2 tablespoons flour
- 4 tablespoons oil
- 2 onions sliced
- 2 garlic cloves crushed
- 1 teaspoon turmeric
- 4 green chillies finely chopped
- 2 tablespoons lemon juice
- 175ml (6 fl oz) thick coconut milk (*2)
Method
- Cut the fish into several medium sized pieces and coat with the flour.
Heat the oil in a frying pan, add the fish and fry quickly on both sides.
Remove with a slotted spoon and set aside.
- Add the onion and garlic to the pan and fry until soft and golden.
Add the turmeric, chillies,
lemon juice, coconut milk, and salt to taste and simmer, uncovered for ten
minutes or until thickened.
- Add the fish and any juices, spoon over the sauce and cook gently for
2 to 3 minutes, until tender.
Serves 4.

- Any white fish can be used.

- Coconut milk - You can buy coconut milk from most supermarkets,
or make it from scratch. Alternatively, dissolve
creamed coconut to give desired consistency.
