Chilli (Capsicum frutescens)
Chillies are the pods of an annual plant of the Capsicum family, indigenous
to Central and South America. There are many different varieties, the
flavour of which can vary as much as the heat.
Cayenne Pepper or Chilli Powder is pure ground Chilli powder and is also
known as Red Pepper. This should not be confused with Chili Powder which
is a blend of Chillies, Cumin, Oregano and Garlic.
Chillies contain capsaicin which gives them their heat, the majority of
which is found in the seeds and membranes. The heat can be reduced by
removing the seeds before cooking.
