Curry of the week : 10-August-97
Ekuri Toast
Once again, as with Masala Beans on Toast,
not strictly a curry but it is vaguely Indian and very easy to prepare.
Ingredients
- 4 eggs
- 300 ml (1/2 pint) milk
- 2 green chillies, finely chopped
- 2 tablespoons fresh coriander, chopped
- 75g (3 oz) cheddar cheese, grated
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper, freshly ground
- 4 slices bread
- corn oil
Method
- Break the eggs into a bowl and whisk together. Slowly add the milk, and
whisk again. Add the chillies,
coriander, cheese, salt and pepper.
- Cut the bread slices in half diagonally, and soak them, one at a time, in
the egg mixture.
- Heat the oil in a frying pan and fry the bread slices over a medium heat,
turning them once or twice, until they are golden brown.
- Drain off any excess oil and serve immediately.
Serves 4.
