Ginger (Zingiber officinale)
Ginger is the underground stem of an iris-like plant which is grown widely
in the tropics. It has a warm, sweet aroma and a hot, biting flavour.
Ginger is available in dried form (whole or powdered) or fresh which should
be peeled and chopped before use.
Complements curries, stir-fries, ham, gammon, fish, fruit, pickles.
